What DO They DO?
Okay, so you’ve got one. Now what? Do you just stare at it lovingly? Nope! (Though you could, I guess, if you’re into that). You give it to the Fire Keeper... your Fire Keeper, back at Firelink Shrine. And she... changes.
Yeah, changes. Dramatic, right? Think of it like upgrading her software. (Because Fire Keepers are basically highly advanced, slightly creepy, support AIs. Right?). It unlocks new dialogue options, new abilities... new EVERYTHING!

More specifically, handing her a Fire Keeper Soul lets her heal the Dark Sigil. Remember those pesky Dark Sigils you get if you, say, decide to hang out with Yoel of Londor? (Yeah, yeah, free levels, I know. We've all been there). Those Sigils lead to the "Usurpation of Fire" ending. A dark ending, if you will.
Giving the Fire Keeper the soul lets her, and thus YOU, reverse that. Now you can try for a different ending! Freedom! Or, at least, a different flavor of existential dread. Because, you know, Dark Souls.
But...there’s a catch! Surprise! (Did you really think it would be that easy?).

Healing the Dark Sigil… it costs you. Souls, that is. A hefty sum, mind you. Like, "I should have upgraded my weapon" hefty. Are you sure you want to commit? Think carefully!
The Eyes of a Fire Keeper: A Whole Other Story
Now, this is where it gets really interesting (and potentially morally questionable). There's a different item, called the "Eyes of a Fire Keeper." Found in the Untended Graves. See, sometimes this game really wants you to go down a dark path.
If you give the Eyes to the Fire Keeper... she'll see the truth. The horrible truth. The truth about what Fire Keepers are, what they do, and what their purpose truly is.

The result? She wants a different ending. One without the Flame. One without the cycle. One where... well, let's just say things get interesting. It unlocks a new ending where you can snuff out the First Flame. A different flavor of dark. Are you sensing a theme here?
But be warned! Giving her the Eyes... it changes her. A lot. She becomes... aware. And that awareness comes at a price. A price for YOU.
After giving her the eyes, do not attack her after you beat the final boss! This will let you summon her and usurp the flame, unlocking the End of Fire ending. Miss this and you get the standard "link the fire" ending.

So, Should You Use Them?
That, my friend, is the million-Soul question. Do you want to reverse your Hollowing? Or do you want to unlock a different ending and see things change? There's no right or wrong answer, of course. It's all about your personal Dark Souls journey. And your tolerance for existential angst.
