Think of 97 West this way: it's a sleeper agent of the steak world. It’s lurking behind the fancy hotel lobby, unassuming and quietly confident. You might wander in for a drink, maybe a snack, and then…bam! You see the steak menu. A perfectly aged cut of meat, calling your name. And you cave.
